Really Chocolaty Easy Gooey Brownies

Molten chocolate, chocolate chips AND cocoa powder! These Brownies are ‘browner’ than Honey Singh’s Brown Rang.

Fudgy or cakey, with or without walnuts, covered with chocolate ganache or warmed and served with ice cream, so many ways to eat a brownie and all of them yum! This is a very easy recipe and it only uses one big bowl that you can dump everything into so it is very easy to cleanup after.

Ingredients:
(Makes one 7*11 pan. I would call it 2 BIG pieces but I guess you can get more)

Semisweet Chocolate, 150 grams, (I have used chocolate chips)
Butter (unsalted), 120 grams, cut into pieces
Cocoa powder, 2 tablespoons
Cinnamon powder, 1 teaspoon
Sugar, 200 grams, white granulated
Salt, a pinch
Vanilla extract, 1 teaspoon
Eggs 3
All-purpose flour, 95 grams
Walnuts, 60 grams, chopped
Chocolate chips, 60 grams

Method
* Preheat oven to 350 degrees F (180 degrees C). Butter (or spray with a nonstick cooking spray) and line your pan with parchment or wax paper. I keep the paper extra long so that when baked, you can use that to lift the brownie out of the pan. I have used a 7*11 rectangle however you can use a 9*9 also. A square will give you even pieces.

* Melt the chocolate and butter in a large stainless steel bowl placed over a saucepan of simmering water. Stir occasionally and resist the urge to lick the molten chocolate. J

* Remove from heat and stir in the sugar and salt.

* Dissolve the cocoa powder in 2 tablespoons of water (to get rid of the lumps) and mix the cinnamon powder. Add this to the molten chocolate/butter mix.

* Whisk in the eggs one at a time, beating well after each addition and add the vanilla extract.

* Finally, stir in the flour, and mix well but do not over beat. You do not want to incorporate a lot of air.

* Stir in the chopped walnuts and the chocolate chips and pour into the prepared pan.

* Bake for about 25 minutes, or until a toothpick inserted in the center comes out with a little batter and a few moist clumps clinging to it. Do NOT over bake or your brownie will turnout very dry and crumbly. Remove from oven and let cool on a wire rack.

* Serve it on its own or warm it and serve it with ice cream.
